i just bought a cotton candy machine. i can't wait to try out these sugars for the flavors! especially the rambutan/rose sugar. and blueberry/lavender.
you have no idea how satisfying gourmet cotton candy is.

I think you're right that the piloncillo will bring its own flavor that cannot be quashed, but the thing to do is just work with it rather than try to hide it with other flavoring agents. You may also have to add more of a spice, herb or fruit to get its flavor to come through. I used just a mellow all-purpose low-refined cane sugar for these recipes, but I'm sure it would be interesting to try other sugars. I bet you're onto something with this! Definitely let me know how it works out.

How much I enjoy and love your blog is beyond words. Every time I wonder at your new creations, what else could I say, I find your baking heartfelt. Besides that I have a questions, I live in Mexico and basically beacause of what you said at the begining of the post I buy organic, fair trade powdered piloncillo, do yo think it will work, due to its distictive flavor? Maybe I should give it a try and report back!

Thanks very much everyone! hope you enjoy some flavored sugar goodness soon. I just had enjoyed some masala chocolate sweetened coffee as I did morning gardening. Let me tell you, nothing makes pest management better than a hot, sweet and spicy accompaniment.

Dad, the sugars on the on window sill. Works for now, but the fans aren't in yet, so that will be a problem. But, yeah, there's no room. Maybe we could make a ceiling suspension unit?!

I know Spice Rack 2 was maxed out the day I put it up (replacing Spice Rack 1 that was a major underestimate), but now it appears that you are in need of Salt Rack 1 and Sugar Rack 1 - but where??? Welded to the refrigerator? Nailed on the door of your cabinet? Is there any wall space left in the kitchen? If so, send me some measurements, jar size and jar count.

Your Masala Chocolate sugar has me wanting to try it (minus the nutmeg of course) in coffee big time even though you know I am only a secondhand coffee sniffer at heart.

Ah, cardamom - love, love, love it. I may just have to go grind up some just to sniff it. I just ate at the Indian resturant in Rochester and nearly had my fill of kheer - it needed more cardamom and pistashios however.
